CHARACTERISTICS OF THE VN JOVEN
The control of temperature in fermentation and in the varieties used, Syrah and Garnatxa, allows us to obtain the VN JOVEN, in which resigns the violet tones and the complex fruit-bearing.
ELABORATION
The bunches get into the cellar about the middle of October, we proceed to press before putting everything in a steel deposit, in those it ferments the must-paste at a maxim temperature of 24°C. We do not do a long maceration, we take out the wine twelve days after, so we pretend a fruit-bearing and expressive wine, but also elegant and easy to drink. After the suitable rest, the wine is bottled in February.
